Parmesan Chicken Breasts
Recently I was getting the "itch" to grill something new. It had been a few days which usually seems like a few years. If you have a pellet grill then you know the addiction. You know the smell that it puts off while you are cooking something special. So I asked my...
Ribeye Rub Recipe
I had a favorite rub that I would use on ribeyes and other steaks that I would buy every time I visited Monterrey California. There was a little place on the wharf called "For Garlic Lovers." You'd think it would then be a very garlicky but it really wasn't. I'll tell...
Chuck Eye Steaks with Jalapeno Chimichurri Sauce
I grilled up some amazing chuck eye steaks from Crowd Cow this past weekend. I imagine over my lifetime that I've had chuck eyes before, however I've personally never cooked them. Crowd Cow did NOT disappoint. I cannot stress enough how good their meat tastes. Call me...
Fried Jalapeno with Chipotle Mayo Burgers
I am my biggest critic. I think that is standard for most people when it comes to a multitude of things. I always critique the food I BBQ especially when it comes to my favorite food: burgers! I knew that my order from Crowd Cow was on the way, and I knew that I had...
Crowd Cow delivery!
I received this delivery from Crowd Cow. I found their story to be quite interesting. The founder essentially decided to mix the crowd funding style of business with a meat / butcher service. What they do is put up a cow to sell and people share parts of that cow...
Pork Belly Burnt Ends
I enjoyed making some pork belly burnt ends this past weekend. I think they need to be called pork candy though because they are so tasty! I think that since it isn't just slapping a piece of meat on the bbq that many backyard BBQers are a little scared of tackling...
Santa Maria Tri-Tip
Living in central California, one of the cuts of meat I have cooked the most is the Tri-tip. I had actually never heard of Tri-tip until I moved to this area. It wasn't a thing where I lived the first 13 years of my life even though I grew up around cows and a...
Bacon & Cheese Stuffed Mushrooms
This weekend I cooked up one of my favorite appetizers. This is a pretty simple recipe to cook up. You also have a lot of freedom to make changes as you see fit. Be creative!
Ingredients
- 1 1/2 cups of a 3 cheese shredded mix
- 1/8 cup Parmesan cheese
- 5-6 ounces of cream cheese
- 12 ounces of bacon / chopped
- 20 mushrooms
- Your favorite seasoning
Instructions
- Add the bacon to a skillet and cook it while you prepare the rest of the appetizer.
- Add the shredded cheese and Parmesan cheese to a bowl and mix thoroughly.
- Add the cream cheese and mix thoroughly.
- Sprinkle on seasoning to taste. I used a seasoning called "The Gospel" by Meat Church which isn't overpowering.
- Add the cooked bacon and a little bit of bacon grease to the bowl and mix thoroughly.
- Prepare your mushrooms by taking the stems off.
- Spoon fill the cavities of the mushrooms with your cheesy/bacon goodness.
- Optional: season the top of your mushrooms
- Place your mushrooms on your favorite BBQ and cook until the cheese is melted and the mushrooms change color.
- Enjoy!
